Gluten Free Coconut Oatmeal Protein Cookies

Servings 14 Cookies

1 egg
1 egg white
½ cup coconut flour
¼ cup dry steel cut oats (3/4 cups once cooked)
1/3 cup unsweetened applesauce
¼ cup unsweetened apple butter
1 tsp cinnamon
1 tsp baking powder
½ banana
½ serving of protein powder of choice (I used garden of life chocolate protein)
¼ cup peanut butter powder
Optional: chocolate chips to taste


1. Preheat oven to 350F
2. Bring one cup of water to boil and add steel cut oats. Simmer until fully cooked per directions on packaging, then set aside
3. Mash ½ banana in a mixing bowl
4. Add eggs, applesauce, and apple butter to banana and combine until smooth
5. Add coconut flour, oats, protein powder, peanut butter powder, and baking powder to wet ingredients and combine until smooth.
    Can add a little water if needed.
6. Measure out 2 tbsp per cookie and form on baking sheet
7. Bake for 20 minutes or until golden brown
