Dairy Free Chocolate Fudge Bites

These little fudge bites are great for a little chocolaty, antioxidant-packed treat after dinner.  They are bite size because they are nutritionally dense, so consume them in moderation.  A little bite goes a long way!

Makes 25 Bites

1/2 tsp, vanilla extract
1/3 cup coconut oil
1/5 cup cocoa powder unsweetened
4 pitted medjool dates
1/2 cup peanut butter (just peanuts—check the ingredients!)
1/4 cup peanut butter powder (like PB2 or PBfit)


  1. Soak dates in room temperature water for 20 minutes
  2. Drain dates and put into a food processor with an S blade.  Pulse until finely chopped.
  3. Add the peanut butter and peanut butter powder and process until smooth.
  4. Add the vanilla extract, coconut oil, and cocoa powder to the food processor until smooth.
  5. Poor/spoon batter (about 1tbsp size) into petite muffin cups (If you do not have these, put into lightly greased pan (about 8 x 8) and spread evenly).
  6. Refrigerate until solidified (if in a pan, cut into 25 pieces).
