1 2/3 cup dry rolled oats
1 1/3 cup whole wheat flour
1/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3/4-1 cup milk
1/2 cup honey
1/4 cup butter or coconut oil, room temperature
2 cups cherries, pitted
Preheat oven to 400F. Grease muffin tin with cooking spray.
In a food processor, combine oats, flour, sugar, baking soda, baking powder, and salt. Pulse 6 times until mixed.
In a large mixing bowl, combine milk, honey, butter and eggs. Mix well.
Add dry ingredients into wet and fold just until all ingredients are combined. Don't overmix!
Fold in cherries. Pro tip: drying cherries as much as possible before adding them will keep them from "bleeding" into the rest of your muffins.
Fill muffin tins 3/4 to the top.
Bake for about 20 minutes. Resist the urge to open the oven during this time :)
Allow to cool for 5 minutes before serving.
