Asian Fusion Zucchini Bowl
Ingredients
1 large zucchini (large enough to cut and hollow out bottom for bowl)
½ 5 oz can tuna (solid white albacore in water, or tuna of choice)
1/3 cup seaweed salad
¼ cup dry brown rice (can use quinoa as well)
Directions
1. Preheat oven to 425°F
2. Boil ½ cup of water
3. Place ¼ dry brown rice into water once boiling (if using raw long grain brown rice, boil for about 40 minutes)
4. Cut the bottom third of the zucchini off and hollow out the middle of the zucchini
5. Place the hollowed-out zucchini in oven for 25 minutes or until tender
6. Once tender, put ½ can of tuna and 1/3 cup of seaweed salad into the hollowed-out portion of the zucchini
